Clam Chowder

Ingredient Quantity
Potatoes 3
Celery 1 Stalk
Minced Clams 13oz
Evaporated Milk 12oz
Bacon 4 slices
Salt and Pepper

Cook bacon. Keep 1 tablespoon of grease and add to medium pot. Finely chop celery, and add to grease. Cook a small while. Separate clams from juice, and water down the juice to one cup. Add juice to pot. Peel and dice potatoes. Add to pot with a bit of salt and pepper. Heat to a boil, cover and let simmer until potatoes softened. Add clams, milk, and bacon. Mix and heat but do not boil. Serve in a bowl with a sprinkling of pepper.
