Whole Chicken Roast with Potatoes

Ingredient Quantity
Whole Chicken 4 Pounds
Yellow Potatoes 2 Pounds
Garlic 2 Cloves
Olive Oil 4 Tablespoons
Rosemary, Thyme, Salt, Pepper, Parsley

Remove guts from chicken, and season chicken with salt and pepper, under skin of breasts and on skin. Bring a pot of water to a boil. Peel and cut potatoes into wedges. Boil potatoes for a few minutes till just done. Peel and mince garlic. Mix garlic with olive oil. Add a good amount of spices into the oil. Pour potatoes into a 9x13 baking dish, spread to cover bottom. Lay chicken on pan, breast-down, and pour oil mixture inside chicken cavity. Roast for one hour at 400*F, until outside is browned and temp is reached. Remove from oven, carve. Mix potatoes around dish with chicken juices and oil, and serve with salt and pepper.
